I knew to only plant one zucchini seed, maybe a max of two seeds in my garden this year but my garden brain took over and thought- well what if one doesn’t grow? I ended up planting four seeds and they of course, all grew beautifully. I do think they’re a beautiful plant, how the bloom sticks to the end of the zucchini for a long time, the orange of the bloom contrasting with the deep greens of the zucchini. Beautiful or not though, I have a lot of zucchini because each plant yields 25-40 zucchinis, that’s approximately 10lbs of zucchini each! Not to mention you take your eye off those bad boys for a second and they end up turning into these huge monstrous beasts. They’re most tender and delicious when they’re little, but here are some of my top favourite ways to use up that zucchini.
How to use zucchini
- Stuffed zucchini boats- hot Italian sausage and some spaghetti sauce, get the recipe here. Serve it with some salad or noodles.
- Chocolate zucchini bread, my dad make a delicious loaf. I remember being offered some and turning my nose up, until I tasted it! Then I wanted to take it home with me. Yum. Find it here.
- Borrow a spiral’er and make some noodles, toss on some pesto. Learn more here.
- Preserve it for fall for soup! I didn’t know this was possible until I offered my zucchini’s to anyone who wanted them and Kenda (our lovely neighbourhood soup lady!) was excited to get some to preserve for later. I just need to make sure I stay realistic and don’t put in all the work to freeze it, just to throw out freezer burnt produce months down the road.
